How to cook:
Wash, clean, slice, salt and simmer the eggplant for 20 minutes. Slit the tomatoes cross-wise, blanche them in boiling water, rinse with cold water, peel and divide into quarters. Wash, clean and slice the zucchini and peppers into strips. Peel and slice the onions finely. Peel and press the garlic and ginger. Pat dry the eggplant slices with a paper towel. Heat the pan or wok, add the oil, onions, zucchini and eggplant and brown them while stirring on medium heat for 5 minutes. Add and brown the paprika, tomatoes and ginger. Pour in the vegetable meat juice and add soy sauce, sugar, sherry and starch. Bring everything to a boil, cover the pot and continue boiling for 15 minutes. Drizzle with sesame oil and serve. It goes well with Turkish unleavened bread or rice.
