How to cook:

Season the salmon with lemon juice, garlic, tarragon, salt and pepper. Marinate in the fridge for 1 hour. Meanwhile, puree the shallots, tomatoes and mango in the mixer to form a soft mixture. Add the fish broth or water and chopped ginger, mix again and put aside. Heat oil in a frying pan and fry the salmon for 5 minutes on each side. Put the mango puree in the pan and stew until the salmon is whitish pink.Season the hot mango sauce with salt and pepper and pour over the salmon.
